Brisé dough is a typical dough used for French baking. Ideal for making sweet flour products, as well as as a base or top layer of pie. The dough is very easy to prepare and can be used universally for a variety of dishes.
The Brisè dough is similar to the puff pastry, but it’s not the same. The test recipe is very simple and inexpensive.
Ingredients for 4 people:
Flour 200 gCreamy
oil 100 gCold
water 70 ml
For the dough, place flour, cold butter, cut into pieces and a pinch of salt in a blender and whisk everything until the mixture becomes sandy and chalky.
Pour the mixture onto the metal, glass or marble surface and mix (the surface should be cold), adding a little cold water to obtain an elastic, supple dough.
Wrap the dough in plastic sheeting and leave it in the fridge for 40 minutes.
In the refrigerator, the dough can be stored for several days in a sealed container.
